Halibut Lasagna
From: Diamond M Ranch Resort
6 T butter
1 ½ lb Halibut
2 garlic cloves
¾ t thyme
1/3 c. flour
Salt
1 ½ c. chicken broth
1 c. whipping cream
8oz lasagna noodles cooked
2 c. Swiss cheese –Asiago
Mix the first 8 ingredients. Make 2 layers of noodles,
8 ingredients, and cheese. Bake 9×13 at 350 for 1 hour.
Rhubarb Butter Crunch

6 c. diced rhubarb
1 c. sugar
4 T flour
1 c. brown sugar
1 c. rolled oats
1½ c. flour
½ c. butter
½ c. shortening
Combine rhubarb, sugar & flour and put in 9×13 pan.
Combine remaining ingredients and sprinkle over rhubarb.
Bake at 375 for 40 minutes.
Chocolate Cake

2 c. flour
2 c. sugar
2 t baking soda
1 t salt
½ c. cocoa
1 c. buttermilk
1 c. coffee
1 c. oil
2 eggs
Mix dry ingredients, then mix in other ingredients.
Bake in 9×13 at 350 for 30-40 min.

Strawberry Rhubarb Pie
From: Diamond M Ranch Resort
1 ½ c. sugar
3 c. Rhubarb
1 ½ c. Strawberries
3 T flour
Salt
¼ t nutmeg
Pour into prepared pie shell with lid to top.
Bake at 400 for 15 min reduce heat to 350 and bake for 30-40 min.
Rhubarb Custard Pie

(Large pie) (small pie)
3 eggs 2 eggs
3 T milk 2 T milk
2 c. sugar 1 ½ c. sugar
¼ c. flour 3 T flour
¾ t nutmeg ½ t nutmeg
4 c. rhubarb 3 c. rhubarb
1 T butter 2 t butter
Pour into prepared pie shell with lid to top.
Bake at 400 for 15 min reduce heat to 350 and bake for 30-40 min.
Marinade for Smoked Salmon

1 c. brown sugar
½ c. non-iodized salt
6 c. soy sauce
3 c. water to dissolve sugar
3 c. dry white wine (chardonnay)
To taste:
Franks hot sauce or Tabasco
1 c. Yoshida or Teriyaki Sauce
Onion powder
Garlic powder
Pepper
Marinade in cool place for 24 hours. Dry 24 hrs, smoke 12 hrs
Marinades 50lbs of Salmon
Salmon Marinade

2 sticks (1/2 lb) Unsalted butter
2 garlic cloves
¼ c. soy sauce
2 T mustard
1 T Worcestershire sauce
2 t ketchup
Marinade 20 min & baste, then grill or fry salmon
Smoked Salmon Seasoning

¾ c. brown sugar
¼ c. salt
3 bay leaves crushed
Water to make liquid
Soak ½ hour
Glaze & smoke
Makes for 2 Sockeye
Salmon Dip
From: Diamond M Ranch Resort
2 c. Salmon drained
1 8oz cream cheese
1 T lemon juice
2 t. grated onion
1 t. prepared horse radish
¼ t. liquid smoke, optional*
Chill after mixing with mixer
*If you use smoked salmon, omit this
jalapeño’s are a good addition for some
Halibut Batter
From: Diamond M Ranch Resort
1 c. flour
¼ t. salt
2 t. sugar
3 T oil
¾ c. milk or beer
1 egg
Mix batter ingredients with egg beater. Dip halibut into batter and fry 375-400 degrees until golden brown.
Smoked Salmon Brine
From: Diamond M Ranch Resort
1 large king or 2-3 reds.
½ c. non-iodized salt
¾ c. sugar (1/2 white & ½ brown)
2 T pepper
3-4 bay leaves crumbled
4 cloves garlic minced
1 qt water (½ hot tap water to dissolve salt & sugar)
Fillet salmon (leaving skin on) cut into strips 1-1 ½ inches wide. Cover fish with brine and refrigerate for 6hrs or overnight. Cut brine time to 3hrs if using frozen fish.
Remove fish from brine rinse with cold water (just a dip or a swirl). Place racks sprayed with Pam. Allow to sit for 3 hours to glaze. Smoke 8-10 hrs if weather is very dry & hot or as long as 18hrs if damp weather.
